Some of you will be shocked to know this about gluten, which can be found in anything made with wheat, rye, barley or malt and meat from the animals that eat these grains. Most forms of gluten intolerance cause the body to produce an abnormal immune response in the presence of wheat or its proteins.
An allergy to wheat can produce symptoms such as hives, difficulty breathing, joint inflammation and digestive problems; in serious cases, a person with this allergy can experience anaphylaxis, a sudden and severe reaction that can be life-threatening.
People with celiac disease, (which causes gluten to inflame and damage the villi in the small intestine), can suffer from bloating, weight loss, fatigue, and headaches as the body has difficulty obtaining all the nutrients it needs from food.
There are severe cases where people eat a lot of food, but they are foods with gluten, and are actually starving, because the villi (which is what absorbs the nutrients from the foods you eat), becomes inflamed, making it impossible to absorb the nutrients needed to live. Many people who aren’t gluten intolerant, eat a gluten free diet, because they just feel better overall. You don’t need gluten, and with some research to find recipes, you can easily get away from it completely; it becomes not just what you do, but it becomes a lifestyle. Read labels, and live healthier, longer.
